Desiccated coconut is produced from mature coconuts which have been shelled and dehusked. Then the water is drained, the flesh washed, pasteurized, cut finely and dried. Primarily used to coats lamingtons, bliss balls and other raw treats and baked goods, it can also be added to sweet and savoury dishes to add a sweet, creamy flavour.
