These are the dried leaves of the curry tree. Described best as having curry flavour and aroma it is best used in curries, dahls and soups. They are most widely used in Indian cooking usually fried along with vegetable oil, mustard seeds and chopped onions. While it does not have a dominant flavour, it gives meals a richer, robust flavour. Dried they are extremely light so not many are required for a recipe.
